Cooking vessel for through mixing of sensitive productsThese mixing vessels are fitted for steam or thermal oil operation allowing precise temperature control. Optional rockwool insulation and clad with a stainless steel external sheath is available. If necessary, the pan may be fitted with an emulsifier/homogeniser. This adds greatly to the flexibility of the unit, especially where emulsified sauces and gravies are needed.
